Summer Flavours - Strawberries

Not so long ago, berries just meant summer and we loved them for it. Now they are also a ‘health food’, which is a bonus, but our bodies already knew instinctively that a big bowl of strawberries or raspberries was a good thing.

Nearly all berries are gorgeous eaten just as they are, sweetened if necessary with a little sugar, topped with cream for a spot of indulgence.

All berries can be added raw to fruit and salads but raspberries and strawberries are particularly suitable. You can enjoy a handful of dried cranberries as a snack.



STRAWBERRY PANNA COTTA

 

INGREDIENTS

STRAWBERRY AND APPLE COMPOTE

• 2 Dessert apples, peeled and finely chopped
• 1 Punnet of strawberries, hulled
• 2 tbspn caster sugar

PANNA COTTA

• 175ml Fresh milk
• 188g Caster sugar
• 1425ml Double cream
• 15ml Vanilla essence
• 5 Leaves gelatine
• Mint sprigs

METHOD

STRAWBERRY AND APPLE COMPOTE

1. Cook the apple, strawberries and sugar until the apple has softened. Allow to cool.

PANNA COTTA

1. Soak the leaf gelatine in cold water
2. Bring the milk, sugar and the vanilla essence almost to the boil
3. Remove from the heat and add the squeezed out gelatine
4. Stir until it melts, then whisk in the double cream
5. Pass and then pour into glasses, chill to set
6. Spoon the compote on top of panna cotta
7. Garnish with mint sprigs
8. Enjoy
