As July kicks in, so does barbecue season! This month, HMS Belfast has provided us with the perfect recipe that is sure to impress your guests. And what makes it better - anyone can give it a go!  

 

Ingredients for the Skewers:

250g Packet Halloumi – Cypriot Cheese

1 Red Onion

1 Red Pepper

1 Courgette

6 cherry tomatoes

6 Bamboo Skewers – soak in water over night before using to avoid skewers catching fir

 

For the Herb and Lemon Dressing:

75ml Olive Oil

1 Lemon – Zest & Juice

A Mixture of chopped Soft Herbs such as, Parsley, Mint, Chives, Coriander, Basil, Sorrel

1 Clove garlic crushed

Maldon Sea Salt and freshly ground pepper

 

Method

  1. Cut Halloumi and Vegetables into same bite sized pieces, thread onto skewers (2 pieces halloumi/per skewer)
  2. Combine all the ingredients for the dressing and season to taste, brush onto skewers, before grilling and whilst grilling
  3. Serve with crusty bread and a mixed leaf salad
